Cava is a Spanish sparkling wine which may be produced in the entire country; however 95% of the production takes place in the region of Catalonia. In case of this sparkling wine, the classic method (Champagne Method) is also applied. Wines mature for at least 9 months and sometimes even for 30 months (in such case, the label bears the Gran Reserva information).
Cava, contrary to Champagne, should be consumed as quickly as possible after it enters the market. Spanish sparkling wines are very popular around the world; they are universal and constitute a great source of refreshment on account of crispy acidity and low sugar content. They combine well with frutti di mare such as calamari, shrimps or scallops, especially during holidays in a warm country.
